Braised Chicken Thighs with Mushrooms

1 tbsp olive oil6 chicken thighs (skinless and boneless)1 tbsp Cajun Seasoning.5 tsp salt.5 tsp black pepper2 tbsp butter or margarine16 ounces mushrooms, thinly sliced1 cup sliced yellow onion1 tbsp minced garlic2 tbsp all purpose flour2 tbsp tomato paste2 cups chicken stock2 tbsp coarsely chopped fresh rosemary leaves4 cups steamed basmati rice (or quinoa)2 tbsp chopped fresh parsley leaves
Set a 10-inch saute pan over medium-high heat and add the oil. Season the chicken thighs with Cajun Spice, salt and pepper. Place the chicken in the pan and sear, about 3 minutes. Turn and sear on the other side, about 3 minutes. Remove the chicken from the pan and add butter and mushrooms. Saute the mushrooms, stirring occasionally, until browned and most of the liquid has evaporated, about 4 minutes. Add onions and garlic to the pan and saute for 4 minutes. Sprinkle the flour into the pan and cook, stirring often to make a light brown roux, about 4 minutes. Add the tomato paste, stock and rosemary to the pan, bring to a boil and reduce to a simmer. Return the chicken to the pan. Cook for 15 minutes, then turn the chicken thighs over and cook for another 15 minutes. Serve the chicken over rice or quinoa and garnish with parsley.
