Tabbouleh Salad

Ingredients
Bulgar, .5 cupCucumber (peeled), 1.5 mediumOnions, raw, 1 largeRed Ripe Tomatoes, 3 medium whole (2-3/5" dia)Parsley, two bunches, flat leafOlive Oil, .25 cupLemon Juice, .25 cup1-3 cloves fresh garlicTBSP SumacsaltpepperFrsh Mint - optional
Directions
Rinse bulgar well, set aside in bowl.
Clean and finely chop parsley and mint. Dice onion, tomatoes, cucumber, add to parsley and mint. Add bulgar and toss salad.
Crush and chop garlic, add to spices, olive oil, lemon juice and pour over salad, mix well.
Taste and adjust by adding more spices and/or lemon, etc.
Each serving is about one cup.
