Caribbean Rice and Beans

1/2 cup water1/2 cup uncooked instant rice1 tsp veg. oilCooking spray1 cup chopped onion1/2 cup chopped celery1/2 cup diced green pepper3 garlic cloves, minced1 cup coarsely chopped tomato1/8 tsp salt1/4 tsp cayenne pepper1/4 tsp ground cumin1/4 cup chopped fresh cilantro1 (15oz) can black beans, drained and rinsed1/2 cup (2 oz) preshredded part-skim mozzarella cheese
1. Bring water to a boil in a saucepan, and stir in rice. Cover, reduce heat, and simmer 5 minutes or until liquid is absorbed.
2. Heat oil in lg. nonstick skillet coated w/ cooking spray over medium high heat until hot. Add onion, celery, pepper, and garlic; saute 5 min. Add chopped tomato, salt, cayenne, and cumin; saute 2 min.
3. Stir in cooked rice, cilantro, and black beans; cook 1 minute or until thoroughly heated. Makes 4 servings - 1 cup bean mixture and 2 tbsp cheese.
