CHIPOTLE MARINADE & SALAD DRESSING WITH PICTURE

5 chipotle (or jalapeno) peppers - seeded & chopped by hand1-3 cilantro leaves2 cloves garlic2 medium shallots1/3 cup rice vinegar1/4 cup olive oilJuice of 2 limes1t salt
Use gloves when working with peppers (trust me, I learned this the hard way...)
Puree peppers, cilantro, garlic, shallots & vinegar in food processor or blender. With machine running, add oil slowly & then lime juice.
Put into glass jar (or whatever container) and let refridgerate overnight so all flavors settle, and lime juice neutralizes peppers :-)
Makes approximately 12 servings....but I'll have to test it out...
