Italian Chicken Linguine

1 lb linguine cooked1 16 oz can diced tomatoes with herbs1 lb chicken breast cut into bite size pieces2 tbsp olive oilzest and juice of one lemon1/2 cup chicken broth (fat free, low sodium)3 tsp chopped garlic (or more to taste)1 onion chopped1 cup fresh chopped flat leaf parsleyabout 3 tbsp chopped fresh basilzest and juice from one fresh lemon1/4 cup grated parmesan cheese
Cooke linguine as directed. Drain.
Toast pine nuts in oven for about 5 minutes till golden. Reserve for garnish.
While Linguine is cooking: Saute chicken in olive oil about 5 minutes. Add onion & garlic and cook till onion is translucent. Add lemon juice, zest, parsley, basil, pepper, and chicken broth. Cook about 5 minutes. Add the parmesan cheese.
Mix with the pasta. Serve with garnish of toasted pine nuts. Makes 6-8 generous servings.
Serve with a simple dark green salad & maybe a glass of good italian red wine.
