Vegetable Barley Soup

1 tbsp olive oil1-14.5oz can No Salt Added Diced Tomatoes 2 cans Water (use empty tomato can)3 stalks Celery, sliced1/2 med Onions, chopped1 clove Garlic, chopped1 cup Carrots, sliced 3/4 cup Barley1 Bay Leaf1/2 tsp Thyme1/4 tsp Basil1/4 tsp Oregano1 tsp Parsley1 small zucchini or squash, chopped1 cup frozen Peas1 cup frozen Green Beans
Heat oil in pot, add onions, celery, and garlic, cook for 2-3 minutes. Add all ingredients except for zucchini, peas, and green beans. Cook on med heat for 30 minutes. Stir in remaining ingredients & cook an additional 5 minutes.
Salt & Pepper to taste then serve...not included in nutritional info because we don't salt ours :)
Great with a sprinkling of grated parmesan on top also!
