Pasta Salad

Ingredients
  • 1 lb. tri-color pasta
  • 1 bunch broccoli
  • 6 baby carrots, sliced thinly into circles
  • 1 small red pepper, cut into 1" square pieces
  • 1 cucumber, peeled, halved and cut into thin slices
  • 1 or 2 green onions, thinly sliced
  • 1 bottle KRAFT FREE Fat Free Italian Dressing
Directions
1. Cook pasta, drain, and then rinse with cold water.



2. Cut broccoli into florets and cook in microwave or blanch in hot water, and rinse with cold water.



3. Mix pasta, broccoli, carrots, red pepper, cucumber and onions in large bowl and chill.



4. Just before serving, pour dressing over pasta and vegetables and mix well.



Makes 8 servings.

    Try green bell peppers I don't know the potassium numbers for green bell peppers but that is what I use in my pasta instead of broccoli - 6/26/09

    THE SODIUM CONTENT IS WAY TOO HIGH! MAYBE, IF YOU MUST USE A DRESSING, MAKE UP YOUR OWN SO THAT YOU CAN CONTROL THE SODIUM. ALSO, I AM ON A LOW-POTASSIUM DIET AND WILL HAVE TO ELIMINATE THE BROCCOLI. CAN ANYONE OFFER ME A GREAT SUBSTITUTION? - 1/5/09

    My whole family, including my 1yr old, loved this! Add a light sprinkle of feta cheese for extra flavor and calcium. It doesn't add much fat if you only use a handful or so for the entire thing. - 5/30/08
