Luau Salad (like Cheese Cake Factory but with reduced calories and fat)

10 ounces grilled, boneless, skinless, chicken breast, diced1/2 cup mango, diced1/4 cup carrots, thin strips 1/2 cup cucumber, chopped1/4 cup onions, chopped1/2 cup green bell peppers, chopped1/2 cup red sweet peppers, chopped2 Tbs. scallions, chopped3 cups romaine lettuce or other salad greens, chopped4 Tbs. Girard's Balsamic Vinaigrette fat free salad dressing1 or 2 tsp. Splenda (depending on how sweet you like it)1 Tbs. rice vinegar1 Tbs. Kikkoman Sweet & Sour Sauce1/2 tsp Sesame Oil4 Nasoya Egg Roll Wrappers
Preheat oven to 375.
Whisk salad dressing, splenda, vinegar, and sesame oil in a small bowl; set aside.
Place all salad items in a bowl, along with diced chicken; pour salad dressing over mixture and toss to coat. Divide mixture in half.
Spray both sides of egg roll wrappers with cooking spray, bake for 4-6 minutes or until crisp (times may vary depending on your oven). Remove from oven and cool.
Lightly brush one side of baked wrappers with a small amount of sweet & sour sauce.
To assemble: Place a small amount of salad mixture on two plates. Top with wrapper. Add more salad mix on top, followed by another wrapper and the remaining salad mix.
*Note - Because the wrappers are baked, their consistency is not quite as "fluffy" as the fried kind, but they still have a lot of crunch.
Also, the regular recipe calls for sesame seeds and macadamia nuts, I omitted these to help reduce the fat and calories. You can add them if you wish, but know that it will change the nutritional values.
