2 matzohs1 egg1/4 cup milk1/4 cup wateroptional: salt or cinnamon (not included in calorie count)
Mix the egg, milk, and water together. Crumble the matzoh into pieces about 2 inches in size into the liquids. Mix, and let sit about 10 minutes until the matzoh has absorbed some of the liquid. Fry in a teflon frying pan, and you won't need oil. Let it fry until one side is solid and it can be flipped. Then let the other side brown, flip onto a plate, add as much applesauce as you want, and serve!
I make this with a real egg and milk because I'm always searching for ways to eat more good fats. You can use egg subsitute and it should work as well. I've never tried subsituting anything for the milk.
