Apple Puffed Pancake (Gluten-free and lower fat version)

Ingredients
1/2 stick Butter1/2 C Apple Sauce3 med. Apples, thinly sliced6 Eggs1 1/2 C Skim milk1 C Four Flour Bean Mix (Bette Hagman's gluten free mix)3 T Granulated sugar1 tsp Vanilla1/2 tsp Salt1 tsp Cinnamon (more or less to taste)3 T Brown sugar
Directions
Preheat oven to 425*. Melt butter in 13x9 pan. While butter is melting, slice apples. When butter is melted, add apple slices and apple sauce. Mix a bit. Return to oven until butter sizzles. Do no let brown. While butter and apples are in the oven, mix eggs, milk, flour, white sugar, vanilla, salt, xanthan gum and cinnamon in a large bowl. It's OK for the flour to be a little lumpy. Pour batter over apples. Sprinkle with brown sugar. Bake 20 minutes. Makes 8 4x3" pieces.
