Crockpot Meatloaf and Potatoes

"BBQ sauce":1 cup ketchup1/2 cup unpacked brown sugar1.5 tsp Dijon or brown mustardMeat loaf- 5 medium red potatoes, washed, skin on, cut into 1-1/2 inch (3.8 cm) pieces.- 1 package (1-1/4 pound) ground turkey- 1/4 cup applesauce, unsweetened- 3/4 cup Kashi GoLean cereal, crushed after measuring.- 1/4 tsp coarsely-ground black pepper
Mix together 1 cup ketchup, 1/2 cup unpacked brown sugar, and 1.5 teaspoons of mustard. Separate in half.
Grease the bottom of the crockpot with two tablespoons of olive or flaxseed oil. Put the cut potatoes into the crockpot and gently roll them around in the oil until lightly coated.
Combine the ground turkey, applesauce, cereal, 1/2 of the "BBQ sauce", and pepper in a bowl. Mix gently with a fork or your hands. Be careful not to compact the meat. Shape the mixture into a round or oval loaf (depending on your crockpot) and place on top of the potatoes. Cover the meatloaf with the other half of the "BBQ sauce" mixture.
Cover and cook on High one hour. Turn crockpot to Low and cook for six to seven hours, until a meat thermometer shows an internal temperature of at least 160 degrees F.
To serve, lift out the meatloaf and place on a large platter. Place the potatoes around the meatloaf and serve with vegetables of your choice. Makes five servings.
