Spicy Curried Ginger Pork

Ingredients
- Slice onions, finely chop garlic, mince about half the ginger, slice the other half of the ginger, slice carrots or any other veggies. - Saute all wet ingredients and veggies in an oiled skillet. Remove when onions are translucent. (*tip: add onions, garlic and really hard veggies first; add mushrooms and soft veggies last)- Mix all dry ingredients in a bowl. Toss and coat pork with dry ingredients. Cook coated meat in oiled skillet.- Combine sauteed mixture and pork. Add remaining dry ingredients, 2/3 c. plain whole yogurt, and a couple Tbs of brown sugar. Mix and simmer.- Pour over rice, quinoa, or some other cooked grain.Optional - may add half a drained can of no-salt added tomatoes or 1 c. fresh tomato.
