Fresh Cherry Cobbler

Ingredients
1 pound sweet cherries (pitted)1 cup water2 Tbsp. Cornstarch1/4 tsp. cinnamon1/3 cup sugar1/4 tsp salt1/3 cup flour1/4 cup sugar1/2 tsp. baking powder1 Tbsp.Canola Oil1 large egg
Directions
1. Remove any stems from cherries:using cherry pitter, remove pits. (or, with a sharp knife, cut each cherry in half and remove pit)
2. In a 2 quart saucepan, stir water and cornstarch until blended. Add pitted cherries, cinnamon and 1/3 cup sugar and 1/8 tsp. salt. Over medium heat, cook unitl cherries are soft and mixture thickens and boils, about 5 minutes. Stir frequently. Put mixtures in 8 x 8 inch pan.
3. Preheat oven to 375 degrees. In small bowl with spoon, mix flour, baking powder, canola oil, egg 1/4 cup sugar and 1/8 tsp salt just until blended. Spoon batter on top of cherry mixture. Bake 20 to 25 minutes or until topping is golden.
4. Can be served with whipped cream or cool whip. (Not figured into nutrition facts)

    I love that this recipe is dairy free. My son is allergic to milk. I have one critique - the ingredients say baking "soda" and the directions say baking "powder." I used the soda. I also added a cup of fresh raspberries to the fruit and 1/2 t vanilla to the batter. Used a straw to pit cherries. Yum! - 7/27/10
