Easy and Light Hollandaise

Ingredients
3/4 cup of Fage greek yogurt4 T butterjuice from a fresh lemon3 egg yolks
Directions
Separate 3 eggs
Save whites for another recipe
Combine yolks, juice yogurt and butter in heavy saucepan (or double boiler)
Over low flame, whisk constantly until combined and thickened.
Serve over eggs benedict

    Try it and see...It might not have the characteristic yellow of hollandaise.
