1/4 cup flour2 Tbsp. extra virgin olive oil1 cup red wine1 large white onion, chopped2 cups chopped cherry tomatoes3 large carrots, chopped3 cups chopped green pepper3 cups sliced mushrooms2 cups sliced okra4 cloves garlic2 bay leavesSalt and pepper to tasteCreole seasoningWater as needed
Heat the oil in a large pot over medium heat. Whisk in the flour and continue to whisk until it starts to brown and smells nutty. (The roux should be a little loose, add water as needed).
Add the onion, carrots and pepper. Saute until slightly softened.
Add the wine to deglaze. Stir and add the remaining ingredients.
Cover and cook, stirring occassionally, until heated through.
