1/4 Cup Whole Wheat Pancake Mix1 tblsp. milled Flax seed (optional)1 tblsp. Splenda1/4 tsp. cinnamon1/4 tsp. vanilla1/4 Cup egg substitute such as Egg Beaters1/2 Cup unsweetened applesauceOptional topping Quick cooking oats sprinkiled on top with 1 Tblsp. chopped walnuts, or just the nuts.
Mix all ingredients in a microwave safe dish (I use a 24 oz. round corning bowl. ) Cook on high power for 3 to 6 minutes. Time depends on how your microwave cooks. Mine requires 6 minutes I have used other ovens and three minutes was sufficient.) It should be pulled away from the sides of dish somewhat. Serve with a little sugar free syrup. One or two tablespoons. This makes one serving.
