Ingredients
eggplantonionsmarinara sauceparmisan cheeseitalian sausage :optional
Directions
Peel the eggplant, cut into 1/2 inch slices. Place slices on cookie sheet with a small spray of olive oil. Spoon the marinara sauce on each eggplant disk. Add the onions, meat, and spoon some parmisan cheese on them. Put in the oven at 350 for about 40 min. Makes about 6 servings

    This is AWESOMEEEEE... I used garlic olive oil for the eggplant, then added fresh sauteed spinach on top of the sauce, then fresh tomato, red bell pepper, then parm cheese
