1 tbsp olive oil1 sm red onion chopped1 cup red cabbage sliced1/2 med eggplant cubed1 cup chopped broccoli1/2 med summer squash cubed1 pkg Chik'n style smart strips (or tofu, or any other meat substitute)1/2 cup Soy Vey Teriaki Sauce (or your favorite teriaki sauce)
Heat oil in skillet or stir fry pan, add onions and cook until softened.
Add cabbage, broccoli and eggplant and cook about 5 minutes.
Add summer squash, chik'n strips and teriaki sauce and cook on low another 5-8 minutes.
