Frittata 1 Large Egg 1 String Cheese

Ingredients
1 large whole egg1 string cheese (1 oz) - I use Frigo Cheese Heads 100% Natural String Cheese in individually wrapped 1-oz servings. These are part-skim mozzarella cheese.Make as many frittatas at a time as you desire, depending on how many dozen eggs you wish to use. Each frittata consists of 1 egg and 1 string cheese.Optional: Add chopped red, yellow or green peppers, green onions, or other veggies as desired during cooking process. I make my frittatas plain, but you may wish to experiment with herbs and spices.
Directions
Preparation: Unwrap each 1-oz. string cheese, slice thinly, and dice loosely. Each diced portion of cheese goes into individual containers for portion control (small, empty yogurt containers work well). Making 1 frittata at a time, beat 1 egg in small bowl and stir in diced cheese. (Optional) Stir in chopped veggies.

Pre-heat 1 or 2 small saute pans over medium heat and add a small amount of cooking oil or cooking spray. Pour mixture into saute pan and cook over medium-low heat until frittata begins to brown, then flip and cook other side. Do not overcook or frittatas will be too dry. Finished frittata will be thin and the size of a small pancake. To save time, use 2 saute pans if you are cooking a large number.

Storage: Let frittatas cool in refrigerator before freezing in individual Baggies.

Reheating: Heat on High setting in microwave for 1 minute, or heat in pan on stovetop. Serve with salsa, ketchup, or other low-calorie condiments.
