Lump Crab Stuffed Flounder

Ingredients
8 Flounder Fillets1 Container Lump Crab Meat1/4 cup Brummel & Brown1/2 cup chopped Onion1/2 cup chopped Celery1/2 cup chopped Bell Pepper1 small drained can Mushrooms2 oz 2% Milk1 TBSP EVOO1/2 cup Water1 tsp Old Bay SeasoningJuice of 2 fresh Large Lemons2 cups Pepperidge Farms Stuffing Mix
Directions
Saute veggies in Brummel & Brown.
Mix in Old Bay Seasoning, stuffing mix, milk, crab meat, juice of 1 lemon, and water. Take off heat and set aside.

Spred EVOO in bottom of 9x13 glass baking dish and squeeze juice of 1 lemon over bottom of pan. Place flounder fillets in pan without overlapping and spoon stuffing onto fillets.

Bake in 350* oven at 30 min until fish is white and flakes.

I served this with steamed broccoli.
