Tamz Confetti Shrimp Salad

Beans, black, 1.5 cup Black-eyed peas (cowpeas), 1.5 cupYellow Sweet Corn, Frozen, 2 cup Red Ripe Tomatoes, chopped, 3 cupRed Onion, raw chopped , 1.5 cupGround Cumin , 1 tbsp Pepper, red or cayenne, 1 tsp Cilantro, chopped raw, 1/2 cup Salt, to taste, about 1 tbsp Yellow Bell Pepper, chopped, 1 cupGarlic powder, 1 tbspChili powder, 1 tbsp Lime Juice, .25 cup Honey, 3 tbsp Shrimp, cocktail, cooked, 16 oz
You can opt to use canned beans but it will increase the amount of sodium per serving. I soak and cook my beans the night before.
All fresh items should be finely chopped to about 1/4" square. This is the longest part of the preparation.
Mix all ingredients and chill for at least 1/2 hour before serving, to marinate flavors together.
Makes approximately 12, 3/4 C servings.
