French Lentil Salad

Ingredients
1/4 Cup Craisins1 Cup French Lentils2 Cups Water1/4 Cup Lemon Juice2 T EVOO1 Small Onion1/4 Cup Walnuts1/2 Cup Feta Cheese1/4 Cup Fresh Parsley
Directions
Combine water and french lentils in a sauce pan and bring to a boil. Then let simmer for 20 - 25 minutes until soft, but still chewy. Then add the craisins and onions and let cook 2 minutes more.

Once cooked, drain excess liquid off of lentils and mix with the rest of the ingredients.
