Corn Soup

Ingredients
1 tbsp Olive Oil1 c. Chopped Onions1 Med. Yukon Potato, cut into 1/4 inch cubes3 c. Water2 c. Chicken Broth1 c. Chopped Carrots2 c. Corn Kernels
Directions
Heat olive oil in a medium saucepan. Add onions and potato and cook for 2 minutes. Add one cup of the water and then simmer for 10 minutes.

Add the broth, the rest of the water, carrots, and corn. Simmer for 2-5 minutes. Emulsify in a food processor and return to saucepan. Season to taste with salt and pepper. Garnish with chives.

Makes 5 servings.

    I love how healthy this recipe is. I'm not a HUGE fan of carrots and I think this tasted a bit more of carrot than corn so I ended up adding quite a bit of spice at the end to overwhelm the carrot taste but it's great- and would be AWESOME if you love carrots and corn :) - 5/11/10
