Wacky Mac with Spinach, Bacon and Asiago Cheese

Ingredients
12 oz Garden Spiral Pasta Noodles9-10 oz Spinach, fresh1 cup Hormel Premium Real Crumbled Bacon4 oz shredded Asiago Cheese3/4 cup Sun Dried Tomatoes2 cloves Garlic, minced1/4 cup shredded Parmesan Cheese2 Tablespoons Olive Oil
Directions
Bring a stock pot of water to a boil and cook the pasta according to package directions. Meanwhile combine spinach, bacon, Asiago, sun dried tomatoes, garlic and Parmesan in a large bowl and mix well. Add hot pasta to bowl, drizzle with olive oil and toss until all ingredients are well blended. Salt and pepper to taste, if desired.

    Loved, loved loved this!!!! I have to say though I think it makes more like 8-10 servings. I had a huge bowl, and we have a ton left over. Will make this again for sure. Thanks for sharing! - 6/25/11
