Ingredients
250g Gluten Free Pasta1/2 Bottle of Sundried Tomato Pesto100g Fresh Spinach200g Meat / Poultry (Optional)Red Pepper, sliced1 Bottle of marinated Artichoke Hearts1 Packet Snow Peas, Fresh8 Sundried Tomatoes, slicedPumpkin SeedsGrated ParmesanRoasted Pine Nuts
Directions
Cook Pasta as per directions (Approx. 8 mins).
In a large fry pan brown pumpkin seeds then add red pepper, cook for 2 ins. Add snow peas & cook for 2 mins, add sundried tomatoes, artichoke hearts (Drained), cooked meat (If applicable) and heat through.
Drain pasta then add pesto and stir through. Place fresh Spinnach on top then add the fry pan mixture on top and stir through until spinnach is a little wilted.
Dish onto plates, sprinkle over grated Parmesan and roasted Pine Nuts - Enjoy!
