Dan's 4-cheese pasta filling

Ingredients
2 ounces each of grated Parmesan, Romano, and Mozzarella cheeses (part skim milk).2 ounces of Ricotta cheese.
Directions
Gently mix all four cheeses together. Stuff your favorite pasta and cook according to pasta directions (included with my related recipe Dan's Old Country Whole Wheat Pasta) plus one or two minutes. Ravioli are done when the majority of them float.

Stuffs 16 small (2" square) ravioli or 8 large stuffed shells, 1 tbsp per ravioli (2 per shell).

    It's low carb because the recipe is for the cheese filling. It is up to you which type of pasta (Whole wheat, Low carb, ect.) you place the filling into. Very tasty though! Can't wait to try my cooking skills with stuffed ravioli and this filling next! - 8/23/09
