Squash Bread, Lemon

Ingredients
3/4 tsp baking powder3/4 tsp baking soda3/4 tsp salt3/4 tsp ground cinnamon1 cup white flour1 cup wheat flour2 large eggs1/4 cup egg substitute1 cup Sucralose1 1/3 cup shredded squash (yellow, zucchini, etc)2 tbsp lemon juice3/4 cup unsweetened applesauce
Directions
Preheat oven to 350 degrees F (175 degrees C). Lightly Pam a 9x5 inch loaf pan. Sift together flours, baking soda, baking powder, salt and cinnamon.
In a large bowl, beat eggs with sugar for 10 minutes. Add applesauce and beat for two more minutes. Mix in lemon extract and zucchini . Fold in flour mixture until evenly moistened; do not overmix. Pour batter into prepared pan.
Bake in preheated oven for 60 minutes, or until a toothpick inserted into center of the loaf comes out clean.
