Ingredients
1 Can Crisp Corn, Drained and Rinsed1 Can Shoepeg Corn, Drained and Rinsed1 Can Blackeyed Peas, Drained and Rinsed2 Bunches Green Onion, Chopped1 Large Sweet Onion, Chopped3 Stalks of Celery, Chopped1/2 Red Pepper.Chopped1/2 Orange or Yellow Pepper, Chopped5 Jalapenos, Chopped1 Bunch Parsley, Chopped4 Roma Tomatoes, Chopped1 Bottle Zesty Italian Mediteranean DressingOptional- Hot Sauce or Cayenne to taste Salt and Pepper to taste
Directions
Mix all ingredients and marinate in the refrigerator for 12-24 hours before serving. Perfect amount to make a large bowl to serve at a barbecue or party with tortilla chips of your choosing. For a healthier version, toasted pita triangles are great with it.
