Crustless Quiche

1 cup eggbeaters / egg substitute1.5 cup light whipping cream1 cup shredded cheese - i.e. colby, cheddar, monterey jack1/4 cup chopped onion1 cup mushrooms4 strips turkey bacon cooked and crumbled
Preheat over to 350 degrees.
Spray a casserole dish with vegetable oil spray
Put the shredded cheese, chopped onions, mushrooms and crumbled bacon in the casserole dish.
Beat eggbbeaters and whipping cream together (I use the Magic Bullet)
Pour egg mixture into casserole dish.
Bake for 60 minutes or until knife inserted in center comes out clean.
Quiche is easy to make and a great way to use up leftovers. Leftover vegetables can be chopped and stored in bags in the freezer. When making the quiche, substitute a freezer bag of leftovers for the mushrooms.
