Toni's Sugar-free Cinnamon-Peach Cobbler

Ingredients
Peach Mixture:3Tbsp Smart Balance Spread1/2 cup (100g) Splenda2 Tbsp cornstarch1 tsp ground cinnamon2 tsp vanilla extract1/2 tsp lemon juice4 cups fresh peaches1 1/2 cup waterTopping:1 cup bisquick1 cup old fashion oats3 Tbsp splenda1/4 tsp ground cinnamon1/2 cup skim milk1 Tbsp melted Smart Balance spread
Directions
1. Heat oven to 400 degreesF. In 4-quart saucepan, heat 3 Tbsp margarine, 1/2 cup sugar and the cornstarch over medium heat 1 minute, stirring constantly, until margarine is melted. Stir in 2 teaspoons cinnamon, the vanila, lemon juice and peaches with 1 1/2 cup water. Heat to boiling; boil 1 minute, stirring occasionally. Pour into a ungreased 13 x 9-inch glass baking dish.

2. In a medium bowl, stir Bisquick mix, 2 Tbsp of sugar, 1/4 tsp cinnamon, the milk and 1 Tbsp melted margarine until soft dough forms. Drop dough by heaping tablespoonfuls over hot peach mixture. Sprinkle with remaining sugar.

3. Bake 20 to 25 minutes or until peach mixture is bubbly around edges and topping is golden brown. Serve warm.

    Love this made 1st time as recipe said was fantastic. I can't ever leave anything alone. I had been given some Fresca Peach flavored soday and used it in place of the water. WOW it really set off the peaches.

    Too soupy! Biscuit topping was pretty flavorless and the texture was less than desirable. I will not be making this again! Leave the oatmeal out if you are going to make it and less water! - 8/6/13

    I'm making this recipe as I type. It looks great. I added a handful of blueberries that I had leftover. I love the way peaches and blueberries look and taste together. One suggestion.
