Marinated Salad Veggies

Ingredients
Tomato, slided in wedgesCucumber, sliced thinlyRed Onion, slicedSage leaves - I like lemon sageTwig of Rosemary1/3 cup vinegar1 tsp salt1 cup cold water
Directions
Warm vinegar to dissolve salt, remove from heat. Add water and let cool.

Place veggies and herbs in quart jar. Pour vinegar over veggies and seal jar.

Rotate jar to coat all veggies. Set jar on counter on side and rotate while cooking dinner to ensure all veggies get marinated. Allow veggies to marinate 1 hour. You can store them in the refrigerator for up to 2 weeks.

Serve veggies over greens - no other dressing needed.
