Grilled Zucchini

One large zucchini, (about 2 cups sliced)1/4c Olive Oil1 Tbsp Garlic Powdersalt and pepper
Slice zucchini about a quarter inch thick
Pour about quarter cup of olive oil in a deep plate
mix in the garlic powder with the olive oil
Dip each slice of zucchini in the olive oil on both sides
salt and pepper all of the slices
grill on medium heat for about 7 minutes on each side or untill slightly crispy and brown.
Makes about two one cup servings

Have used a similar recipe: with half olive oil & half soy sauce (or instead of soy sauce, balsamic vinegar, it's your choice). Skip the salt, soy sauce has enough. Marinate 30 minutes & grill. Perfectly delicious. Not sure what the soy or vinegar will do to the calorie count (not much, my guess). - 4/27/10
