Whole Wheat Zucchini Chocolate Chip Bread

Ingredients
¾ cup brown sugar3 tablespoons olive oil2 large eggs1 teaspoon vanilla2 cups shredded zucchini1 cup unsweetened apple sauce2 cups whole wheat flour1 ¼ teaspoon baking soda½ teaspoon cinnamon¼ teaspoon salt½ cup semi sweet chocolate chips½ cup walnuts pieces
Directions
Preheat oven to 350 degrees

Place first 6 ingredients in bowl and mix well. (I normally use a blender on my zucchini so that the texture is almost liquified)

Combine remaining ingredients to the wet mix, beating until moist.

Spoon batter into loaf pan (coat pan with olive oil spray/Pam) and bake at 350 for about 55 minutes. Check by inserting a wooden toothpick (I used a skewer) in the center. If is comes out almost clean, it’s perfect.

This makes 2 loaves, serving size based on 8 slices per loaf (which are pretty big servings).
