Ingredients
3 cups pumpkin, peeled and cut into 2" pieces2 medium carrots, cut on the diagonal in 1" pieces2 red or orange bell peppers, cut into 2" pieces1 large onion, cut into quarters2 tsp olive oil1/2 tsp red chili flakessalt & pepper to taste
Directions
Place all in a baking dish. Toss together. Bake uncovered in 375 degree oven for 45 minutes, stirring once during the baking process.
