Apple Pear Cucumber Salad

Ingredients
2 Tbsp. whole grain mustard2 Tbsp. fresh chopped dill (or 2 tsp. dried dill)4 Tbsp. apple cider vinegar1 tsp. brown sugar2 Tbsp. olive oil2 seasonal crunchy tart apples (Gala, Pink Lady, Braeburn)1 seasonal pear (Anjou, Barlett, etc.)1 English (seedless) cucumber1 small or 1/2 medium sweet onion
Directions
Mix together mustard, dill, vinegar, sugar and olive oil. Set aside.

Core and slice apples and pears into thin slices, leaving skin on for color and flavor. Slice cucumber into rounds. Slice onion any way you like. Add all to bow with dressing and toss to coat.

    Very good. We didn't have any dill or onions so we used basil in place of dill and omitted the onions. - 1/31/10
