Chicken Pad Thai (GF) - NZ MAde

1 Packet of 'Exotic Food' Pad Thai (Includes Seasoning)8 Tbsn Water2 Eggs2 Carrots, stripsBroccoli, small floretsRed Pepper, Scliced thin2 Chicken Breasts, Chopped (Skinless)
Soak Rice Noodles from the packet and the stripped Carrot in boiling water for 5-10 mins.
Beat Eggs with a drop or two of Soy Sauce (Optional) and fry in 2 very thin lots in a pan, then roll up and chop into strips.
Stir fry Broccoli & Red Pepper in the pan until half cooked (Approx. 10 mins on medium heat).
Fry Chicken peices antil browned and cooked and set aside with cooked vegetables.
Strain the Noodles and plce in fry pan with the flavour sachets and water and stir fry until hal of the liquid has been absorbed then add vegeatable and chicken and stir round to coat and heat through. Lastly add the egg and stir through well then serve.
