Ingredients:Oregano, ground, 1 tbsp (remove) Pepper, black, 0.25 tbsp (remove) Thyme, ground, 0.50 tbsp (remove) Salt, 1 tsp (remove) Olive Oil, 0.50 cup (remove) Garlic, 3 cloves (remove) Onions, raw, 2 medium (2-1/2" dia) (remove) Green Peppers (bell peppers), 3 cup, chopped (remove) Zucchini, 3 cup, sliced (remove) Canned Tomatoes, 1 can (remove) Eggplant, 3 cup (1" cubes) (remove)
In a 6 quart pot saute onion and garlic in oil for 3 min. Add eggplant and stir-fry for 5 min. Add peppers and cook 5 min. Add zucchini cook for 5 more min. Add seasonings and 28 0z can tomatoes. Cover and simmer for 30 min.
