Hand Made Mint Chocolate Chip Ice Cream

1 cup milk (calculations use 2%)Half cup Sugar3 egg yolks1 tsp. vanilla extract1 tsp. peppermint extract2 cups heavy whipping creamHalf cup semisweet chocolate chips10 drops green food coloring
In a saucepan, combine milk, egg whites and sugar and heat over meIn a saucepan, combine milk, egg whites and sugar and heat over medium heat. Stirring constantly (as to not cook the eggs or curdle the milk), heat only until tiny bubbles form along the edges. About 3 or 4 minutes.
Add vanilla extract and peppermint extract.
Put into large bowl and then into freezer until semi frozen (about an hour or hour and a half).
Beat cream (on high) to soft peaks. Fold into semi frozen mixture. Add 10 drops of green food coloring and mix thouroghly. Return to freezer for about 2 hours, until half frozen.
Fold in chips and return to freezer for a few more hours (preferably overnight). Although if your house is anything like mine, it won't make it over night. :) Enjoy!
