Curried Chicken Salad

Ingredients
1 1/2 lb. boneless skinless chicken breast1/2 c. light mayonnaise1/3 c. skim milk plain yogurt5 teaspoons curry powder1 tablespoon lime juice1 teaspoon honey1/2 teaspoon ground ginger1/2 teaspoon salt1/4 teaspoon black pepper1 medium red onion, chopped (1 cup)8 cups lettuce1/2 c. cashews, dry-roasted
Directions
Simmer chicken in water until cooked through. Transfer chicken to a plate and let cool. Chop into 1/2 inch pieces.

While chicken is cooling, whisk together mayonnaise, yogurt, curry, lime juice, honey, ginger, salt, and pepper in a large bowl.

Combine lettuce, onion, chicken, and cashews. Lightly top with the curry dressing.
