Zuchini Stuffing Casserole

Ingredients
4 medium zuchini, sliced 1/2" thick3/4 cup shredded carrot1/2 cup chopped onion6 TBL butter2&1/4 cups stuffing croutons1 can cream of chicken soup1/2 cup sour cream (I use the reduced fat)
Directions
Boil zuchini until tender. Brown carrot and onion in butter, remove from heat. Add 1&1/2 cups stuffing croutons, soup, sour cream and zuchini. Put into a 1&1/2 quart baking dish and top with the remaining croutons. Bake at 350 for 30 to 40 minutes. Makes 8 servings
