Spanish Rice

Ingredients
1 onion, chopped1 green pepper, chopped3 ripe juicy tomatoes, diced2 cups brown rice1 tbsp olive oil1 tsp cayenne pepper (or to taste)1 tsp sale (or to taste)dash of black pepper
Directions
Chop onion and pepper, saute in large pot in oil.
Add tomatoes and rice, add four and a half cups of water and spices.
Bring to a simmer, stir well, cover and simmer for 30 min or until rice is tender.
Fluff with a fork and serve
If desired you can add grated cheese on top, but this will change the nutritional information. For a main dish I sometimes stir in chopped tofu with the rice.
