Ed's Fresh Tomato & Basil Soup

Ingredients
2 Tbs olive oil4 Tbs unsalted butter2 medium onions, minced4 Lbs ripe tomatoes4 garlic clove, minced8 cups fat free chicken stock1 cup dry white wine1 can (6 oz) tomato paste6 Tbs fresh basilsalt and pepper to taste
Directions
16 Servings: 1 cup each

Saute for 5 minutes onion in butter and oil until soft

Stir in tomatoes, garlic, stock, tomato paste with salt and pepper. Bring to a boil. Lower heat and simmer for 20 minutes.

Use food blender to process soup and strain if necessary add shredded basil.

Check for taste, add basil leaves to garnish.
