Kurneckc's Healthy Eggplant Paramesan

Ingredients
Directions
5 eggs1 eggplant1 tbsp Flax Seed2 cups Ragu Spaghetti Sauce 1 cup Mozzerella Shredded Cheese1/4 cup grated parmesan Cheese
whisk eggs to a froth, add Flax seed, and whisk again.
Place sliced eggplant in the egg mixture then onto a pan sprayed baking tray
Bake at 400 for 30 minutes
Place some spaghetti sauce on the bottom of a baking dish
Remove Eggplants from the tray and put into a baking dish on top of the sauce
Pour rest of sauce over Eggplants
Sprinkle on Parmesan Cheese
Cover with Mozerella
Bake for 15-20 minutes
