Authentic Hungarian Goulash (Gulyas)

Ingredients
Beef round 400g (14 oz)Carrots 100g (3.5 oz)Parsnips 100g (3.5 oz)Celeriac 100g (3.5 oz)Potatoes 3 mediumOnion 1 largeTomato 1 largeGarlic 1 cloveOil (corn) 3 tbspGround Caraway seeds 0.5 tspBay leaf 2 piecesBlack pepperSalt
Directions
In a big pot heat the oil and add the previously cleaned and cut onions. Cook till the onions loose some color, then pull the pot off the heat, and add the paprika. Add 2 tbsp water put the pot back on the heat. Add the cut up cubes of beef round, and cook till the meat whitens, while stirring relentlessly. Pour about 1.5 litres (~50 fl oz) of water in the pot, and cover. Simmer till the meat softens a bit, then add the previously cut up veggies. Season with salt and pepper. Cover again and simmer, till every ingredient is soft. Before taking it off the oven, add the cut up green pepper and the tomatoe then cook for 1-2 minutes. Usually served with bread.

    This was quite delicious, and very hearty. Nice mix of meat and veg. The recipe says to 'add the paprika', but the amount isn't listed. I used a tbspn and that seemed to work well. - 11/17/10
