Cheesy Spaghetti Squash

Ingredients
1 large spaghetti squashapproximately 1 TBSP dried basil1/4 tsp salt8 oz lowfat (1%) cottage cheese1/2 cup shredded cheddar cheese1/2 cup shredded mozzarella cheese1/3 to 2/3 cup of fresh parsley (chopped)1 medium red onion (chopped)4 cloves garlic (chopped, minced or pressed)
Directions
Oreheat oven to 400 degrees
Cut the squash in half, remove seeds
Coat cookie sheet with cooking spray
Place squash on cookie sheet, flesh side down
Cook approximately 30 minutes until tender

Meanwhile heat oil in medium skillet over medium heat
add onion, basil, and garlic and saute for 4 minutes. Add tomatos and cook approximately 3 minutes until mixture is dry. Put aside.

Let squash cool for a few minutes until able to handle. Scoop out flesh into large mixing bowl.
Add cottage, cheddar and mozzarella cheese, salt, parsley and tomato mixture. Combine ingredients gently.

Spray a 13 x 9 baking dish with cooking spray. Fill with squash mixture. Sprinkle parmesan cheese on top. Bake approximately 30 minutes in 400 degree oven until bubbling.

    Great recipe! This was my first attempt eating spaghetti squash as well, and my hubby and I really enjoyed it. Even my very picky 11 year old step daughter said it "wasn't bad!", LOL!
