Ingredients
non-stick spray1/2 cup diced onions2 cloves garlic16 ounces canned Italian-style crushed tomatoes14 ounces canned white beans, drained and rinsed1 cup frozen mixed vegetables1 cup couscous3 cups broth
Directions
Saute onions and garlic until soft. Add all other ingredients.

Bring to a boil, cover, and lower heat. Simmer for 10 minutes. Makes 4 servings.
