Shrimp & Crab Cerviche Salad

Ingredients
1 lb cooked shrimp, peeled & de-veined, cut into thirds1 lb imitation crab meat, chopped1 1/2 cups of diced celery 1 cup of chopped red peppers1 small scallion, chopped1/4 cup lime juice
Directions
In a large bowl add chopped imitation crab, add shrimp, celery, peppers and scallion. Pour lime juice over top and mix coating all ingredients. Cover and chill for an hour. Serve. This dish gets better as all of the ingredients meld. Must eat within 3 days. Great served with flax torilla chips!
