Pizza Frittata

Ingredients

6 eggs80g green peppers, diced90g feta cheese, diced or crumbled35g sun-dried tomatoes, chopped5 black olives, sliced100g ham, diced
Preheat over to 180°C (160 if fan-forced).
Grease desired pan (I used a 6 hole muffin pan).
Crack eggs into a small jug, and whisk until combined.
In a medium mixing bowl, combine all other ingredients.
Spoon ingredients into muffin holes (don't pack down).
Pour egg mix over other ingredients, dividing the eggs evenly (one egg per hole. If you don't trust your judgement, whisk and pour each egg individually).
Sprinkle with a little dried thyme, and place into oven until golden brown. Test with skewer to see if they are cooked through. Turn off oven and leave frittata inside until ready to serve. If planning to serve cold, allow to cool completely within oven for best results.
Serve with baby spinach leaves.
