"Life of the Party" Avocado Corn Salsa

* 2 cups frozen corn kernals* 1 avocado cubed (peeled and deseeded)* 1 small red onion, chopped finely* 1/3 bunch of fresh cilantro chopped (more if desired)* 1 can black beans (rinsed and strained)* 1 can mexican style tomatoes (strained - Red Gold Mexican Fiesta work great)* 1 jalepeno finely chopped - no seeds - (this ingredient Optional for extra spice)* 2 Tbsp. light mayo* Juice from one lime* Adobo seasoning
Chop, rinse and strain all veggies (don't thaw corn ahead of time). Mix all veggies and cilantro together. Mix mayo, lime juice and adobo seasoning (to taste - be careful on how much you use because of sodium content). Pour mayo mix over veggies and blend all together. Refrigerate for at least one hour to let flavors blend. Serve with baked tortilla chips. Yields 12 servings - about 1/2 cup each
