Crock pot Lentil soup w/ smoked turkey sausage

Ingredients
1 lb. brown lentils, rinsed well1 cup chopped onion2 cloves garlic, chopped1/2 cup celery, chopped1 tsp olive oil2 cups chicken stock1 cup water1 tsp cumin1 tsp cayenne pepper 1 tbs seasoning salt1 cup broccoli flowerettes or spinach leaves1 lb smoked turkey sausage (sliced bite-size)
Directions
Rinse and combine lentils and chicken stock and water in crockpot and cook on high for 1 hour. Turn crockpot to low and cook all vegetables in skillet with a small amount of broth and olive oil until vegetables are tender crisp. Add vegetables to lentils in crockpot and continue cooking for 3 hours. Add seasoning and salt to taste for those with sodiom restrictions. Brown smoked sausage in skillet with a small amount of water and vegetable spray. Add the meat to soup adn continue cooking for the last hour. If consistency becomes to thick, add water until it is soup consistency to your liking. Simmer on low until sausage is done. Makes 10 1-cup servings.
